Parsnip is a slightly sweet fruit that pairs perfectly with orange, especially in this delicious recipe for Orange Parsnip Velouté.
Ingredients for 4 persons :
- 600 g of parsnip
- 3 potatoes
- 1 orange
- 30 cl of semi-skimmed milk
- 1 onion
- 20 g semi-salted butter
- 50 cl of vegetable broth
- Salt, freshly ground pepper.
Orange parsnip velouté
Steam the parsnips 20 min.
After 10 min, add the potatoes.
Take the orange zest and then its juice.
Peel the vegetables, mix them into a puree and pour in the milk.
Cook the chopped onion in the butter for 2 min over medium heat. Add the vegetables and broth, season with salt and pepper.
Bring to a boil. Cover and simmer for 25 minutes.
Pour in the orange juice and zest. Mix, check the seasoning.
Serve the velvety immediately.
